‘A Piece Of Paris’ – Sonal Goel Chopra Knows All About Delectable Macarons

In a time when Indian palate was not acquainted with home baked cakes or pastries, Sonal Goel Chopra’s mother was not only baking at home but also creating some of the most innovative sweets. And she surely left an everlasting impression on Sonal. Born and brought up in a family which loved food and the techniques behind it, Sonal was exposed to the science of baking at an early age. Her evolved sense of taste and an eye for detail were an impetus behind her business.

In 2013, while in Paris, Sonal tasted the original macarons, and that was it. This laid the foundation for ‘A Piece Of Paris’, a one of a kind haven for all sweet lovers.

Sonal speaks to us about her love for macarons, her favorite patisseries in Paris and also tells us about a few master bakers who have inspired her.

1. How did you get the idea to start ‘A Piece of Paris’?

Sonal: I am extremely passionate about food and love exploring authentic food from various parts of the world. It is my strong belief that food forms a large and important part of the culture of any country and so it must be experienced in its most genuine form; the way locals of a city enjoy savoring their favorite treats. It was on one trip to Paris that I discovered French Macarons and fell in love with them instantly, and so A Piece of Paris was born.

2. Why is Paris so special for you as a city? What are your favorite patisseries in Paris?

Sonal: Paris has an enigma of its own. It’s beautiful (when the weather is on your side :)), has a trendy store in every lane and has rules to govern freshness of bread, what else could one ask for 🙂 My favorite patisseries are Ladurée and Pierre Hermé.

3. Tell us a little about your love affair with Macarons

Sonal: Macarons form one of the most indulgent experiences in the everyday life of a Parisian and I wish to spread that same authentic experience to all of India. I’ve had a long and eventful journey with macarons which has led me to create a unique recipe for them. One of the highlights of the journey has been receiving appreciation from Chef Nicolas Houchet of Le Cordon Bleu, London (See post).

It has given me immense pleasure to have had the opportunity to get feedback from consumers not only in Delhi but also in Paris and London (See video).

4. Your top 3 recommendations from the sweets you create

Sonal: I would highly recommend the Red Velvet Macaron, the Lemon Macaron and our Chocolate Chilli Cake.

5. You have collaborated with ace couturiers such as Gaurav Gupta and Anju Modi. How do you see fashion and food coming together in the future?

Sonal: Both the collaborations have been interesting. We’ve also done giveaways for singer Akriti Kakar’s wedding.We’ve created unique products on all occasions where the food (macarons) we’ve served have reflected the theme.

If that can be done with all food products that are served then it just completes the experience for anyone who has come expecting to be amazed by the work of such wizards of the trade.

Fashion and food both form an important part of a person’s life. Fashion is a reflection of your personality to the outside world and the food you eat defines how you look and feel.

6. What inspires you to keep your creative juices flowing?

Sonal: I am greatly inspired by the work of great bakers from around the globe and the unique flavors the world has to offer.

7. Who are a few master bakers that you look up to?

Sonal: Chef Nicolas Houchet from Le Cordon Bleu, London, I have learned a lot from him. Chef Pierre Hermé is also someone I look up to. I particularly love how he effortlessly amalgamates two seemingly contrasting flavors, like his olive lemon macaron.
